Menu Plan Monday

This is going to be a tight, tight week!  I have plenty of meat in the freezer but only about $9.00 to
buy additional groceries with.  I am going to get two kinds
of pasta, a green pepper, peanut butter, bread, 2 cans of chicken noodle soup
and low-fat microwave popcorn.  I'll be shopping at Aldi.

SUNDAY:  Cincinnati Chili 4-ways

MONDAY:  Roasted lemon pepper chicken with potatoes, carrots, and garlic broccoli. 

TUESDAY: Leftover chicken with rice and corn

WEDNESDAY:  Dinner at Mom's house

THURSDAY:   Goulash with green beans and garlic biscuits
(*I make my mother's goulash.  It is very light and fresh with green peppers, onions, garlic, diced roasted tomatoes, noodles and lean ground beef)

FRIDAY:  Beef tacos with refried beans & salad

SATURDAY:  Dinner at Mom's again


  1. We eat a lot of chicken here but I've never tried a roasted lemon pepper chicken - I'll have to add to our list! Thanks!

  2. Looks like a great meal plan! I wish my family would eat goulash!
